with Bacon and Cheddar Cheese

A hearty quick-fix for any celebration or holiday brunch.

Makes 6 - 8 servings

Ingredients list:
  • 1/3 cup of Oberweis Heavy Whipping Cream
  • 3 cups of Chopped Vegetables (red onions, red and yellow bell peppers)
  • 6 strips of Oberweis bacon cooked and chopped
  • 3/4 cup Oberweis cheddar cheese -shredded
  • Salt to Taste
  • Chives for Garnish - Diced
  • 10 Phil's large brown free range eggs

  1. Preheat oven to 350° F
  2. Whisk eggs with heavy whipping cream and season with salt and pepper. Set aside.
  3. Heat 1 Tbsp. of olive oil in an oven safe pan (we used a cast iron skillet) add onion and chopped veggies and cook until softened, about 5 - 7 minutes or longer if you prefer caramelized veggies.
  4. Add bacon and egg mixture to the pan, making sure it is evenly distributed. Top with cheese.
  5. Transfer pan to the oven and bake until edges loosen from the sides of the skillet, approximately 15 - 20 minutes. Do not overcook.
  6. Garnish with chives and enjoy!
