What’s going on? Not much, just chicken out this new Creamy Chicken Gnocchi Bake. This dish has the best of both worlds; tender, juicy Koch Foods Chicken Breast fillets and pillowy soft O’Sole Mio Potato Gnocchi. Ingredients list:
  • Chicken:
  • 3–5 Koch Foods Chicken Breast Fillets
  • 1 tbsp rosemary, minced
  • 3 garlic cloves, minced
  • 2 tbsp of Divina Extra Virgin Olive Oil
  • 2 tbsp Natalie’s Lemon Juice
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tbsp Oberweis unsalted butter
  • 3–4 cups Seal the Seasons North Carolina Cut Spinach
  • 1 (16 oz) package O’Sole Mio Potato Gnocchi
  • Sauce:
  • 2 tbsp Oberweis Unsalted Butter
  • 2 cloves of garlic, minced
  • 3 tbsp all-purpose flour
  • 1 tbsp rosemary, minced
  • 1 1/2 cups whole milk
  • Pinch of cayenne pepper
  • Pinch of grated nutmeg
  • ½ cup Grated Oberweis Swiss
  • ½ cup Grated Sartori Montamore Cheddar
  • ½ cup Grated Sartori SarVecchio Parmesan

  1. Marinate chicken, rosemary, garlic, lemon juice, olive oil and set aside.
  2. In a large skillet melt butter and sear chicken breasts on both sides until golden brown (chicken will continue to cook in the bake). Remove chicken and melt additional butter.
  3. Add spinach and cook until wilted and tender.
  4. For the cream sauce: melt remaining butter, whisk in flour until smooth. Slowly whisk in milk and heat on medium-high heat until sauce has thickened. Whisk in Roth Grand Cru cheese and nutmeg. Add salt and pepper to taste.
  5. Cook gnocchi in boiling water for 2-3 minutes or according to package directions. Drain and set aside.
  6. Arrange chicken, gnocchi, spinach and cream sauce in a cast-iron skillet or casserole dish. Sprinkle with extra shredded Roth Grand Cru® cheese and bake for 30-35 minutes or until bubbly and golden brown.
