BLACKENED SHRIMP CUCUMBER BITES

with Yucatan Guacamole

These cute, little bites are the perfect side dish to any entrée. All you have to do is stack a dollop of Yucatan Guacamole and cooked Xtraordinary Whites Shrimp on a slice of cucumber. Last, but not least, a little fresh cilantro for a beautiful garnish. So shrimp-le!

Ingredients list:
  • 1 tbsp Divina Extra Virgin Olive Oil
  • 1 tbsp creole seasoning
  • 1 pound Xtraordinary Whites Shrimp, peeled and deveined
  • 1 cucumber, sliced
  • Yucatan Guacamole
  • Garnish with fresh cilantro

  1. Toss the shrimp in the oil and the seasoning and cook in a preheated (medium-high heat) heavy bottomed pan/skillet until slightly blackened, about 2-3 minutes per side.
  2. Assemble the bites with cucumber slices, topped each slice with a dollop of guacamole and shrimp.
  3. Garnish with fresh cilantro.
