The phrase “everything tastes better with bacon” rings 100% true with our Bacon-Wrapped Meatloaf. It’s the meal we all remember growing up as dry and tasteless, but our version takes this old-classic to the next level. Carefully wrapped like a present, the meatloaf’s flavor is heightened with a sweet, tangy ketchup glaze and thick-cut bacon. Nestle a couple slices on creamy mashed potatoes, drizzle on a bit more glaze and serve with a side of broccoli. One bite and you’ll see why this dish is considered the ultimate comfort food.

Ingredients list:
  • 2 lbs. Seven Sons Grassfed Gourmet Ground Beef
  • 1 cup onion, diced
  • ½ cup green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 2 Seven Sons Pasture-Raised Large Grade A eggs
  • 6 slices S. Rosen’s Farmers Market Craft White Bread
  • 1 cup Sartori SarVecchio Parmesan Cheese
  • ¾ cup milk Oberweis Traditional Whole Milk
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 10-12 strips Oberweis Thick Sliced bacon
  • For the Ketchup Glaze:
  • ? cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp paprika

  1. Preheat the oven to 350° F. Line a 9 x 5-inch loaf pan with slightly overlapping pieces of bacon.
  2. In a medium-sized bowl, mash together beef, onions, bell pepper, garlic, Worcestershire sauce, eggs, bread, parmesan, salt and pepper.
  3. Spread 2 tablespoons of glaze over the bacon in the loaf pan.
  4. Then press the meatloaf mixture into the pan.
  5. Fold any overhanging bacon over the top of the loaf pan. Flip the loaf pan onto a baking sheet lined with foil or parchment paper. Carefully wrap the ends of the meatloaf with bacon as well, tucking the strips into the other pieces of bacon so it’s tight.
  6. Bake meatloaf at 350° F for 50 minutes. Remove meatloaf, brush with ketchup glaze and return to the oven for another 15-20 minutes. Finished meatloaf should have crispy bacon edges and reach an internal temperature of 165° F in the center of the meatloaf.
  7. Let the meatloaf sit for 10 minutes before slicing and serving.
