with Oberweis Butter and Banner Road Granola

24 Cookies

Ingredients list:
  • 1/2 cup Oberweis unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 c granulated sugar
  • 1 Seven Sons Pasture-Raised Large Grade A egg, room temperature
  • 3/4 cup almond butter, creamy
  • 1 t vanilla extract
  • 1 1/4 cup unbleached flour
  • 1/2 t baking soda
  • 1/4 t salt
  • One-half tube (11oz) of Banner Road The Original granola, pulsed lightly in food processor to break up chunks. Place in small bowl.
  • One jar Sour Cherry Jam
  • 4oz white chocolate, finely chopped
  • 1 heaping T of almond butter, creamy

  1. Whisk flour, soda and salt together in a small bowl. Set aside.
  2. In a large bowl using a hand or stand mixer with paddle, beat butter 1 minute, until smooth. Add both sugars and continue beating for 2 minutes. Add egg and beat on high for 1 minute. Add almond butter and vanilla and beat until combined. Add dry ingredients and mix on low until combined. Dough will be thick and soft. Cover and refrigerate for 1 hour.
  3. Remove dough from refrigerator and using a tablespoon measure, roll into balls. Roll balls into pulsed granola. Using your thumb, make a small crevice in the top of the ball and place on a dinner plate. Loosely cover the indented balls and refrigerate for 2 hours.
  4. Preheat oven to 350 degrees.
  5. Place cookies 3 inches apart on a parchment lined baking sheet. Fill the center with a rounded 1/2 teaspoon of Sour Cherry Jam.
  6. Bake for 11-13 minutes until lightly browned. Cookies will not be completely set until cool. Transfer to a cooling rack.
  7. Carefully melt the white chocolate in a double boiler or microwave. White chocolate is very sensitive to over heating. Stir in the almond butter and drizzle lightly over cookies. Allow the drizzle to set at room temperature for about 30 minutes. Store in covered container. These are DELICIOUS!
